L\u00e4gg i kylsk\u00e5pskallt matfett, skuret i sm\u00e5 bitar. Finf\u00f6rdela fettet i mj\u00f6let med fingertopparna till en smulig massa. Tills\u00e4tt vattnet och arbeta snabbt ihop till en deg.\u00a0<\/span><span style=\"color: #000000;\">Tryck ut degen i en ugnsfast pajform. Degen skall t\u00e4cka formens botten och kanter. Nagga degen med en gaffel och l\u00e5t den st\u00e5 svalt ca 15 min. G\u00f6r fyllningen under tiden och s\u00e4tt p\u00e5 ugnen p\u00e5 175\u00b0C grader.<\/span><\/p>\n<p><span style=\"color: #000000;\"><em>Fyllningen:\u00a0<\/em>Sk\u00e4r den r\u00f6kta skinkan i strimlor. Vispa ihop \u00e4gg, mj\u00f6lk, gr\u00e4dde, salt, peppar och muskotn\u00f6t. Tills\u00e4tt osten och blanda v\u00e4l. \u00a0\u00a0<\/span><span style=\"color: #000000;\"><br \/>\n<\/span><\/p>\n<p><span style=\"color: #000000;\">Gr\u00e4dda pajskalet i 8 min. Pensla pajskalet med uppvispat \u00e4gg och gr\u00e4dda ytterligare 3-4 min. Det uppvispade \u00e4gget skyddar degen mot den bl\u00f6ta fyllningen. <\/span><span style=\"color: #000000;\">L\u00e4gg skinkan ovanp\u00e5 pajdegen. H\u00e4ll \u00f6ver ostblandningen. Gr\u00e4dda\u00a0<\/span><span style=\"color: #000000;\">nedersta falsen i ugnen tills \u00e4ggsmeten stelnat och f\u00e5tt fin f\u00e4rg, ca 40 &#8211; 45 min. Pajen \u00e4r f\u00e4rdig n\u00e4r \u00e4ggstanningen \u00e4r fast och f\u00e5tt fin f\u00e4rg. Pajen stelnar ytterligare n\u00e4r den svalnar.
